Tricolor Paneer Tikka Ingredients 2 tsp – Fresh mint 150g – Cottage Cheese (paneer) 1 tsp – Kasoori methi (Dried fenugreek leaves) 2 tsp – Cumin powder 1 tbsp – Mustard oil 1 cup – Red and Green bell pepper (diced) 1 tsp – Fennel powder 70g – Hung curd 1 tsp – Garlic (chopped) 1 tsp – Turmeric powder 3 tsp – Sugar 2 tsp – Garam masala 1 tsp – Red chili powder Method * Take a large mixing bowl and add the sliced peppers, onion, paneer, garlic and ginger paste, salt, mustard oil and thick yoghurt. Mix together. Split the mixture equally in three bowls. For Paneer Tikka (Red) * Add the red chilli powder, kasoori methi, cumin powder and garam masala to one bowl and mix well. For Lasooni Paneer Tikka (Yellow) * Add the turmeric powder, garam masala, cumin powder and the chopped garlic to the second bowl and mix well. For Paneer Hariyali (Green) * First, take mint, coriander and green chillies and grind together to make a paste. Add this paste and fennel powder to the third bowl and mix well. * Bake each of the mixtures in separate dishes in a preheated oven, for 5 mins. *Serve hot garnished with mint chutney and a wedge of lime **Recipe courtesy – Chef Aman Puri, New delhi**
Tricolor Lassi Ingredients : For Orange Papaya – 1/4 cup (chopped) Yogurt – 1 cup Sugar as needed For White Yogurt – 1 cup Sugar as needed For Green Yogurt – 1 cup Baby Spinach – 1/4 cup Green Grapes – 1/4 cup Sugar as needed Ice cubes as need Method • It is preferred to plain yogurt which is not sour to make lassi. • In a mixer/ blender add papaya and other ingredients to make the orange color lassi • Pulse is few times and add ice cubes if necessary. • Similarly, for white mix the yogurt and sugar in a blender and add ice cubes. • In a blender add spinach and grapes. Pulse it till it pureed then add yogurt and sugar. • Pulse them till combined and add ice cubes. • Serve them in 3 different glasses and arrange them in Irish flag color wise. **Recipe courtesy – Desi Fiesta**
Tricolor Cupcakes Ingredients • 12 vanilla cupcakes [Use a box mix] • green food color • orange food color • decorating sprinkles Buttercream Frosting • 2 sticks salted butter [1 cup], at room temperature • 4 cups powdered sugar • 2 teaspoons vanilla extract • 1-2 tablespoons heavy cream, you may substitute it with milk Instructions Tricolor Cupcakes 1. Prepare cupcake batter using a box mix [follow instructions on the box] or use your favorite recipe of vanilla cupcakes. 2. Divide the batter into 3 equal parts. 3. Color 2 parts of the batter with green and orange respectively. Leave the 3rd part as such. 4. To create a tie dye effect, pour the 3 color batter randomly in the cupcake pan/liners. 5. To make another pattern, start by placing green batter at the bottom and then place orange and white over it respectively. [see pictures above] 6. Bake the cupcakes per instructions of the package/recipe. 7. Cool cupcakes completely before frosting. Buttercream Frosting 1. In the steel bowl of your stand mixer fitted with paddle attachment or using your hand mixer, beat room temperature butter for 3-4 minutes till it turns pale and soft. 2. Start adding the powdered sugar, ½ cup at a time. 3. Mix at a slow speed first and once the sugar is incorporated increase the speed to high and beat for 30 seconds or till mixture is smooth and fluffy. 4. Add in all the sugar, beating well after each addition. 5. Add vanilla extract and milk and beat till frosting is smooth. Decorating the Cupcakes 1. Divide the frosting in 3 parts. The 1st part should have the maximum frosting, colour that green. 2. Next part should have little less frosting than the green and you need to leave it as such. 3. Third part should have the least amount of frosting, color that orange. 4. Transfer all the 3 colored frosting in piping bags fitted with Wilton tip#2D. 5. Take the green frosting first and starting at one point on the edge, make a swirl around the outer circumference of the cupcakes. Make 2 complete swirls for more ruffled look. 6. Next take the white frosting and make a swirl on top of the green one. This swirl should be smaller than the one below it. 7. Lastly take the orange frosting and make a small swirl on top of white. This swirl should be the smallest. 8. Decorate with white sprinkles or with any sprinkles of your choice. **Recipe courtesy – Cook with Manali** Ingredients for Tricolor Pulao Recipe o Basmati rice soaked and drained 1 cup o For orange rice o Ghee 2 tablespoons o Cumin seeds 1/4 teaspoon o Ginger paste 1 teaspoon o Tomato puree 1/4 cup o Turmeric powder 1/2 teaspoon o Red chilli powder 1/2 teaspoon o Red chilli paste 1 teaspoon o Salt to taste o For white rice o Cooked basmati rice 1 cup o For green rice o Ghee 2 tablespoons o Cumin seeds 1/4 teaspoon o Ginger paste 1 teaspoon o Green chilli paste 1 teaspoon o Spinach puree 1/2 cup o Salt to taste Method Step 1 Heat 2 tbsp ghee in two different non-stick pans. Add cumin seeds to one pan and saute till seeds begin to change color. Step 2 Add rice and mix. Add cumin seeds to the second pan and saute till they begin to change color. Step 3 Add ginger paste, red chili powder and red chili paste to the first pan and saute. Step 4 Add tomato puree, salt and mix well. Add 1 cup water and mix, cover, and cook till the rice is done. Step 5 Add turmeric powder and rice to the second pan and mix well. Add green chili paste, ginger paste and salt and saute lightly. Step 6 Add ½ cup water and mix well. Cover and cook. When water starts boiling, add spinach puree, mix well, cover, and cook till the rice is done. Step 7 Place a ring mold in the serving plate. Put the green rice in the mold and press lightly. Step 8 Add cooked white rice and press lightly. Top it with the orange rice and press lightly. Step 9 Remove the ring mold slowly and serve. **Recipe courtesy – Sanjeev Kapoor**
